Ingredients:
- 1 pkg lemon supreme cake mix
- 3 eggs
- 1/3 cup Crisco
- 1 cup sugar
- ½ tsp baking powder
- ¼ tsp salt
- 2 tsp grated lemon peel
- ¼ cup of lemon juice
- Confectioners sugar
*you will need a 13x9x2 pan
Directions:
Preheat over to 350 degrees. Mix 1 egg, Crisco and dry cake mix until crumbly (reserve 1 cup). Pat remaining mixture lighting in an ungreased 13x9x2 pan. Bake at 350 for 15 minutes or until light brown. Beat 2 eggs, sugar, baking powder, salt, lemon peel and lemon juice with a beater until light and foamy. Pour over hot crust and sprinkle with reserved crumb mixture. Bake at 350 for 15 minutes or until light brown. Sprinkle with confectioners sugar. Cool it and cut into 2 x 1.5 inch bars.
